"And I was delighted to taste the difference in the crust over the course of my visits. My first pie displayed a thin, gummy layer of uncooked dough atop that very crisp, desirably scorchy underside that is the hallmark of a distinguished coal-oven crust. Second couple of pies: same thing. Fourth and fifth pies? Just a minimal shiny film of uncooked dough, so that soft sat atop crisp, just as it should. Pizza made at very high temperatures is an art of low tolerances, just a few seconds here or a reshoveling of coals there, and it seemed as if Grimaldi’s young pizzaiolas were getting the hang of it."

"Apparently, the meatball sliders at The Little Owl are All, the embodiment of everything great about the restaurant in three golf balls on buns and to skip them is to may as well have not gone at all." [Damn straight. So much so that I even had to order them on Thanksgiving, even though the GF thought that was a little much.]
